Quick Healthy Recipes

- 2 large eggs
- ½ ripe avocado
- 30g cherry tomatoes
- 1 tbsp butter
- Salt, pepper, chili flakes
- Dice avocado and halve tomatoes
- Melt butter in pan over medium heat
- Whisk eggs and pour into pan
- Gently fold — don't over-mix
- Add avocado + tomatoes at the end
- Season and serve immediately
- 200g canned chickpeas (drained)
- ½ cucumber, diced
- 100g cherry tomatoes
- 50g feta cheese
- 10 kalamata olives
- 2 tbsp olive oil + lemon juice
- Dried oregano, salt
- Rinse and drain chickpeas
- Dice cucumber and halve tomatoes
- Combine all vegetables in a bowl
- Crumble feta on top
- Drizzle olive oil and lemon juice
- Season with oregano and salt
- Toss gently and serve
- 200g red lentils
- 100g fresh spinach
- 1 onion, diced
- 2 garlic cloves
- 1 can diced tomatoes
- 1L vegetable broth
- 1 tsp cumin, turmeric, paprika
- 1 tbsp olive oil
- Sauté onion and garlic in olive oil (5 min)
- Add spices and stir 1 min
- Add lentils, tomatoes, and broth
- Bring to boil, simmer 20 min
- Stir in spinach until wilted
- Blend half if creamy texture preferred
- Season with salt and lemon
- 180g salmon fillet
- 2 tbsp butter
- 3 garlic cloves, minced
- Juice of ½ lemon
- Fresh dill or parsley
- Salt, black pepper
- Side: steamed broccoli
- Pat salmon dry, season both sides
- Heat butter in skillet over medium-high
- Cook salmon skin-side up 4 min
- Flip, add garlic to pan
- Baste with butter for 3 min
- Squeeze lemon and add herbs
- Serve with steamed broccoli
- 150g frozen mixed berries
- 1 frozen banana
- 1 scoop (30g) plant protein powder
- 120ml oat milk
- Toppings: granola, chia seeds, fresh berries
- Blend frozen berries, banana, protein, and oat milk
- Blend thick — add minimal liquid
- Pour into a bowl
- Top with granola, chia seeds, and fresh berries
- Eat immediately with a spoon
- 4 eggs
- 1 can (400g) crushed tomatoes
- 1 red bell pepper, diced
- 1 onion, diced
- 2 garlic cloves
- 1 tsp cumin, paprika, harissa
- Feta, fresh cilantro to serve
- Sauté onion and pepper 5 min
- Add garlic and spices, stir 1 min
- Pour in crushed tomatoes, simmer 8 min
- Make 4 wells, crack in eggs
- Cover and cook 5-7 min (runny to set)
- Crumble feta, add cilantro
- Serve with pita or crusty bread
